Invert sugar, as it is known, is normal sucrose sugar that has been split into it's constituent parts of fructose and dextrose. Quicker and smoother when used in fermentation, brewing sugar is desired as the yeast has less work to do and hence can get on with converting sugar to alcohol quicker and with slightly better flavour!
